Once again, a Japanese recipe makes it to my blog. I have been thinking about posting this recipe for a very long time now. Salmon Teriyaki is a famous rice bowl dish and is a winner with all kind of eaters, even the fussy ones. So I wanted my dish, my recipe even the pictures to come out as perfect as the flavours of dish.

I have experimented with all kinds of sauces to get the right blend of teriyaki mix. I even have a previous post where I declared that to be “the perfect” teriyaki sauce. And in terms of flavours, I still stand by it. But in terms of the time used and method, today’s recipe is the victor.

So whether or not you like salmon, you can try this recipe out with chicken, prawns or any other fish of your liking. Pair it with some greens and you have your self a vibrant and inviting meal.

Here goes..

Ingredients:-

• 2 x 200gms fresh wild salmon fillet
• 1 tbsp cane sugar*
• ¾ cup mirin
• ¼ cup shoyu
• a sprinkle of white or black sesame seeds
• spring onions finely sliced, for garnish

* I used cane sugar you can substitute with any kind of sugar or even honey.

Method:

1. Wash and pat dry the 2 pieces of salmon fillet. ( you can slit the salmon here and there. This is a trick to allow the sauce to seep through as you cook it).
2. In a heated (dry) pan, Add the fillet with the skin side on to the pan. Using a flat spatula apply force, as you push down the salmon fillet to release fat and to flatten the fillet. Leave this to cook for about 5 minutes or until the skin is crisp.
3. Cook salmon on each side for about 3 minutes each.
4. While the salmon is cooking prepare the teriyaki sauce in a bowl by mixing cane sugar, shoyu and mirin. Stir to melt the sugar.
5. Pour the sauce over the top of the salmon.
6. The sauce will thicken as it heats up.
7. Once thick enough, turn off the heat. Place the salmon fillet on top of rice.
8. Generously pour some teriyaki sauce from the pan over the top. Allow some to spill onto the rice.
9. Garnish with some spring onions and sesame seeds.
10. Serve with a side of greens. (Your choice of green stir-fried with garlic and pepper)

I served my dish with a side of brussel sprouts stir fried in butter & pepper
