Chicken Satay

The other day my son and I, decided to try a Chicken Satay recipe that we found in a children’s recipe book*.

We were so surprisingly pleased with the outcome, because it was exceptionally easy and the ingredients were literally FUN. It was ingredients that any child who has been in the kitchen (even if only for a little bit) would know. We immediately decided that it had to go on the blog!

This is a child-friendly recipe, so it is really on the mild side of flavouring but, flavoursome nevertheless.

We made a few adaptations to the original recipe based on what we had on hand at the time. I love that about cooking; you get inspired, you act on it, you adapt what was needed, you celebrate the outcome & eventually you’d probably inspire some one too. I mean, this is the whole idea behind my blog to begin with.

So with out further ado…

Ingredients:- (makes upto 15 skewers)

  • 3500 gms skinless chicken breast
  • 2 tsp soy sauce
  • 1/3 cup crunchy peanut butter
  • 2 tbsp lemon juice
  • 150ml coconut cream
  • 1/4 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tbsp Thai sweet chilli sauce (optional)
  • bamboo skewers (these are available in supermarkets or at any bakery store)

Method:- 

  1. Cut chicken in to long, thin strips.
  2. Put chicken strips in a bowl. Add soy sauce and stir. Marinate in the refrigerator for 10 minutes.
  3. Add peanut butter, lemon, coconut milk, turmeric powder, garam masala and the Thai sweet chilli sauce (we skipped the chilli sauce, because we have a 2 year old) into an electric blender. Blend until the sauce is smooth and creamy.
  4. Mix 3 tbsp of the peanut sauce (from the blender) over the chicken. Once again, mix well and leave to marinate for another 10-20 minutes (the longer the better).
  5. Pre-heat the oven to 180 °C
  6. Thread the chicken onto skewers. Place skewers onto a baking rack on top of a baking tray.
  7. Bake them for 5-7 minutes. Turn chicken and bake the other side for another 5-7 minutes.
  8. In the meantime, heat the remaining sauce until its warm. Serve along side the hot chicken satays.
