Home-made Nacho Dip

If you are playing host during footy tournaments then you better be prepared to feed a hungry bunch because the only thing more (or equally) important than the actual game on game night, is the food!

When I think of game nights, there is always that image of a bunch of boys with their eyes fixed on the tele; but with their hands picking on whatever food is nearest to them and they can really munch and munch and munch on throughout the game

This life saving recipe I am borrowing from my sister, Reetika, who is THE person to talk to when it comes to hosting parties and easy meal planning. The recipe for her nacho dip is a very popular one that has always been a knock-out.

It is a quick dip to put together and the flavours are so well-balanced. I guarantee, that nobody will be able to stop once they start!

I am not one to enjoy the games. I’d rather slip into the comfort of my room and relax for the rest of the evening. This is made possible because I prepare a large pot of dip and leave large packs of Doritos lying around ready for as many refills as they’d like.

I think its time to say, “Everybody let’s nacho!!!” (And the Bollywood song plays in my head, don’t know if you can relate!)

Ingredients:

• 1 tbsp olive oil
• 8 cloves garlic
• 1 each of yellow & green bell pepper (diced)
• 4 tomatoes (diced)
• 1 small white onion (diced)
• Chilli Sauce (according to taste)
• Ketchup (according to taste)
• 1 tbsp dried oregano
• ½ cup shredded cheese (any of your choice)
• 2-3 packets of Doritos

Method: (1 large bowl)

1. In a fry pan, heat olive oil and sauté the garlic for a minute.
2. Add onions stir fry till a bit browned.
3. Add in the bell pepper quickly followed by tomatoes. Cook these for only about 2 minutes, if you like a bit of crunch in your dip or longer if you want it soft and gooey.
4. Season the pan ingredients with ketchup, chilli sauce and oregano. (If making for small children skip the chilli sauce)
5. Just before you turn off the heat, add in some cheese and give a good mix so the cheese melts.
6. Pour into a serving bowl and top with some more cheese.
7. Serve with Doritos or any chips of your choice.
