Broccoli and prawns fried rice

This fried rice is a simple affair !!! But an alluring one.

Prawns, when cooked in butter is so gratifying. In this recipe, I do that but I use minced prawns. I like to mince prawns. It just transforms into something else. You have to try it to believe it.

So, it’s like I said in the beginning. This is a simple fried rice, something you can definitely cook in under 20 minutes. Here goes,

Ingredients: (for 2 kids)

  • 5 medium sized prawns, minced
  •  1/2 cup broccoli, chopped into small florets
  •  1tsp minced garlic
  • 2 tbsp white onion, finely chopped
  • 1 cup previous days cooked rice
  • 1/4 cup water/stock
  • 1-2 tbsp butter ( i like to use a lot of butter while cooking prawns)
  • a pinch of white pepper powder
  • 1 tbsp oyster sauce
  • 1 tbsp Thai soy sauce
  • 1/2 tbsp Thai dark soy sauce 

Recipe: –

1.  Add butter to a heated wok.
2. Sauté  the garlic and white onions in the 1 table spoon of butter. Wait for the onions to change colour.
3. Add minced prawns and another table spoon of butter to the wok. Cook for a minute.
4. Add the broccoli. Give the ingredients a good mix.
5. Add a little stock or water to help cook the broccoli.
6. After 2 minutes, add the oyster sauce, light soy sauce and dark soy sauce.
7. At this point, if there is some liquid in the wok pour it out, or cook till it evaporates. Only then add the cooked rice.
8. Stir to mix. Add a pinch of pepper if using.

Aaaaannnddd it’s done!!!
