Spaghetti with Salmon, basil & babycorn

A shout out to all super moms out there…who push themselves to the maximum and beyond to be a bread earner, a playmate, a teacher, a maid, a chef and every other thing for your children’s happiness. Even though mums are often mistaken for superman, there are days when she needs to relax, days when her body refuses to take part in her daily activities and days when she quickly wants to wrap up so she can succumb early to bed.

For those days, I have a very special quick and healthy dinner menu that can be cooked in half an hour & today I feel happy to be able to share this with you.

Ingredients:-
• Spaghetti ( I use a spaghetti measure to guide me with the portion for 2)
• 1 tbsp butter or olive oil
• 100 gms salmon (cut into small rectangular pieces)
• ½ cup basil leaves
• 1 tbsp oregano
• 2 big tomatoes
• 1 tbsp garlic paste
• 1 tsp salt
• 3 baby corns (cut into small flower like pieces)
• 2 Tbsp full cream (optional)
• 1 tsp ketchup (optional : for a tangy touch)
• Grated Mozzarella (for garnish)

* For children below 1, go low on salt. Blend full-size ingredients like salmon & basil.

Recipe:-

Put a large pot of salted water to boil over high heat. Break the spaghetti into half and add this to the boiling water. Cook until the spaghetti is really soft and easy to chew. One of the many reasons that children love spaghetti is to be able to slurp up each noodle one by one but you do not want it to be too long lest they will choke on it. Use a clean food scissor to cut the spaghetti shorter to whatever length you desire.

For the sauce, Puree the tomato in a blender and set aside. In a heated pan add butter & quickly sauté garlic and baby corn for a few minutes. Pour in the tomato puree & add cream to this; let this cook for a good 5minutes. Now add salmon & basil leaves. Sprinkle oregano, then season with salt and a pinch of black pepper. For older children, add a tangy touch to this dish with some ketchup.

Add the spaghetti to the pan, before serving and toss well.

Garnish with fresh basil and mozzarella.
